Penang Char Kuey Teow

Ingredients
- 2 tbsp of light soy sauce
- 1 tbsp of dark soy sauce
- 1/2 tbsp of oyster sauce
- 1/2 tbsp of fish sauce
- 1 tsp of sugar
- 1/2 tsp of pepper
- 2 tbsp of oil
- 1 tbsp of chilli paste (cili boh)
- 1 garlic clove(s)
- 1/2 of a fish cake
- 6 prawns
- 180g of rice noodles
- 1 egg
- Bean sprouts
- Chives
Direction
- Mix soy sauce, dark soy sauce, oyster sauce, fish sauce, sugar and pepper in a bowl evenly
- Add oil to wok and heat over high heat. Add minced garlic and chilli paste. Stir-fry until fragrant.
- Add prawns and fish cake. Sauté for around 30 seconds.
- Then, add noodles to wok and stir-fry them while adding few spoonfuls of sauce at a time. After finishing all the sauce, add an egg to the noodles.
- Finally, add chopped Chinese chives and bean sprouts. Continue stir-frying noodles until vegetables are cooked.
- Serve hot and enjoy!
